Iris Crawford’s Chess Pie

Ingredients
Pie Ingredients
- 2 cups Sugar
- 2 tablespoon Cornmeal
- 1 tablespoon Flour
- 1/4 teaspoon Salt
- 1/2 cup Butter or margarine, melted
- 1/4 cup Milk
- 1 tablespoon White Vinegar
- 1/2 teaspoon Vanilla Extract
- 4 each Lg. eggs (lightly beaten)
- 1 each 9 Inch Premade Pie Crust (frozen)
Topping Ingredients / Options
Dusting
- Dusting Powdered Sugar (This is a stand alone option)
Cream Cheese Glaze
- 1/2 block Cream Cheese (softened)
- 1/4 cup Graham Cracker Crumbs
- 1/4 cup milk
- 2-3 drops Vanilla Extract
- dustin Ground Cinnamon or Nutmeg (for decoration)
Instructions
Pie Instructions
- Bake pie crust by instructions on packaging, remove from oven and set aside to cool.
- Mix together sugar, cornmeal, flower, salt, melted butter, milk, white vinegar, and vanilla extract until blended.
- Add eggs and stir well before pouring into pie crust
- Bake 350 degrees for 50 to 55 minutes, until pie filling begins to brown evenly across surface. Shield edges of crust with aluminum foil after 10 minutes baking to prevent overcooking edges.
- Remove from oven and cool on wire rack to room temperature. Cover with plastic wrap and refrigerate.
Optional Topping Instructions:
- If Dusting – sprinkle with powdered sugar, or ground cinnamon.
- Cream cheese glaze:Mix cream cheese and milk until creamy. Add 2-3 drops of vanilla (to taste). Whip til smooth and drizzle or spoon over pie slices while serving.
